Preserving
- Avoid contact between raw and cooked foods. Keep the raw chicken on the lower shelves of the refrigerator, and the cooked products on the upper ones. Cover the products with wrapping or preserve them in covered containers.
Cooking
- Wash your hands with soap and warm water, before and after handling the chicken;
- Keep you kitchen surfaces clean by cleansing them with warm water, detergents, and disinfectants;
- Wash the utensils and wood surfaces used in food preparation;
- Meat has to be cooked at proper temperatures;
- Do not leave cooked food at room temperature for more than two hours;
- Do not store uncooked meat near already cooked foods;
- Always follow the instructions on the package.
The roasted chicken is tastier if, prior to placing it in the oven, it is rubbed with lemon juice; the meat will be crispier and will not stick to the oven pan. An added flavor is obtained if chervil (related to parsley) is added to chicken soup, or to paprika chicken dishes.
