These droplets can contaminate:<\/p>\n<ul>\n<li>the sink and the battery;<\/li>\n<li>the work surface;<\/li>\n<li>utensils and mills;<\/li>\n<li>vegetables or other food prepared for consumption;<\/li>\n<li>the hands and clothes of the person handling the product.<\/li>\n<\/ul>\n<p>If these surfaces are not properly cleaned and disinfected, microorganisms can subsequently be transferred to food that will no longer be prepared thermally.<\/p>\n\n<h4 id=\"mitul-11-legislatie\" style=\"scroll-margin-top:120px\">The legislative framework<\/h4>\n<p><strong>Regulation (EC) No 852\/2004 on the hygiene of foodstuffs<\/strong><\/p>\n<p>It establishes the general principles of hygiene and measures to prevent contamination of food throughout the entire food chain.<\/p>\n<p><strong>Regulation (EC) No 853\/2004<\/strong><\/p>\n<p>It establishes specific rules regarding the hygiene of food of animal origin.<\/p>\n<p>Although European legislation does not contain an explicit ban on meat washing in the home, authorities such as EFSA, the European Centre for Disease Prevention and Control (ECDC), CDC (USA) and the Food Standards Agency (UK) recommend that raw poultry meat not be washed, to reduce the risk of cross-contamination.<\/p>\n\n<h4 id=\"mitul-11-industrie\" style=\"scroll-margin-top:120px\">How is this aspect managed in the modern poultry industry?<\/h4>\n<p>In the modern poultry industry, meat is obtained in veterinary-sanitary approved facilities, where processing takes place under strict hygiene conditions and under official control.<\/p>\n<p>After packaging, the responsibility for maintaining food safety lies with the consumer. Therefore, the authorities recommend:<\/p>\n<ul>\n<li>raw meat must not be washed;<\/li>\n<li>cross-contamination should be avoided;<\/li>\n<li>the storage conditions must be respected;<\/li>\n<li>the product must be prepared completely before consumption.<\/li>\n<\/ul>\n\n<h4 id=\"mitul-11-confuzii\" style=\"scroll-margin-top:120px\">Where do the confusions come from?<\/h4>\n<p>Many consumers wash the meat because they believe that this removes bacteria or \u201ecleans\u201d the product before cooking. In reality, the water does not destroy the microorganisms but can spread them onto the surfaces in the kitchen.<\/p>\n<p>Another confusion is that washing would remove any residues or impurities. In reality, the meat sold in authorized facilities is processed according to strict hygiene rules and does not require washing before preparation.<\/p>\n<p>Sometimes, consumers confuse this recommendation with washing fruits and vegetables.
