Pour the sunflower oil into the special paella pan and sauté the onion.
Chop the vegetables (red kapia pepper, green bell pepper, and a champignon mushroom) and add them to the pan.
Add salt and mix well with a wooden spatula.
Add the shrimp.
The chicken thighs are boned, cut into cubes, and added to the pan.
Add the rice to the pan and mix again.
Take the saffron and let it infuse in a container with the chicken stock (diluted in 500ml of water), then pour it into the pan, little by little.
Two chicken drumsticks are also added, then the pan is covered and left to reduce for about 15 minutes, depending on the stovetop you have at home. During this time, a little bit of the chicken stock is added continuously until the rice is cooked.
At the end, whole multicolored pepper and 2 teaspoons of green fig jam are added; it is enriched with a fresh fig, cut into quarters, then served hot.
